  • 1 1/4 cup gluten-free all-purpose flour (160g)
  • 1/4 cup chickpea flour (30g)
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/2 cup water (120ml)
  • 1 tsp baking powder

Instructions:

  1. Blend the spinach: In a blender or food processor, blend the fresh spinach with the water until smooth.
  2. Mix dry ingredients: In a large mixing bowl, whisk together the gluten-free flour, chickpea flour, baking powder, and salt.
  3. Combine wet and dry ingredients: Add the blended spinach mixture and olive oil to the dry ingredients. Mix until a soft dough forms. If the dough is too sticky, add a little more flour; if too dry, add a splash of water.
  4. Knead the dough: Lightly flour a surface and knead the dough for 2-3 minutes until smooth.
