- 1/4 cup chickpea flour (30g)
- 1 tbsp olive oil
- 1/4 tsp salt
- 1/2 cup water (120ml)
- 1 tsp baking powder
Instructions:
- Blend the spinach: In a blender or food processor, blend the fresh spinach with the water until smooth.
- Mix dry ingredients: In a large mixing bowl, whisk together the gluten-free flour, chickpea flour, baking powder, and salt.
- Combine wet and dry ingredients: Add the blended spinach mixture and olive oil to the dry ingredients. Mix until a soft dough forms. If the dough is too sticky, add a little more flour; if too dry, add a splash of water.
